Today I finally realised why I always tended to find Chinese green tea rather pale and tasteless compared to its Japanese counterpart – I was making it all wrong (shame on me)! If you order a tea-set at the Yixing Xuan Teahouse in Singapore, it comes with a lesson in how Chinese tea should really be prepared, and it makes ALL the difference.

I now own an absolutely tiny tea pot, and have added a new page to the blog with a step-by-step summary of the tea-making lesson.
